This simple and healthy recipe for a fresh veggie omelet with goat cheese is ideal for a romantic breakfast in bed (say, mid-February?) with a combination of sweet vegetables and tart cheese. Egg whites are a cholesterol-free, very low-calorie way to capture and suspend fantastic flavors throughout a dish.
The recipe is inspired by "The Billy Goat," a menu favorite at a Georgia restaurant called J. Christopher's, which I expanded on to create a lighter and more colorful version for a perfect Coastal Bend brunch.Accompanying mimosas are optional, but recommended by four out of five people who have ever had a mimosa.
Ingredients:
- 1 tablespoon olive oil
- 1/3 cup purple onions, coarsely chopped
- 1/3 cup red bell pepper, cut into strips
- 4 large Portobello mushroom slices
- 1 cup liquid egg whites
- 1/4 teaspoon cracked black pepper
- 1/8 teaspoon sea salt
- 1 tablespoon creamy goat cheese
Directions:
1/ Over medium heat, add 1 tablespoon of olive oil to a 10" nonstick omelet pan or skillet. Add onions and allow to caramelize for approximately 5 minutes.
2/ Add bell pepper and mushrooms. Turn mushrooms to cook through. Continue to cook over medium heat 5 to 7 minutes.
3/ Pour liquid egg whites over vegetables in skillet. Top with baby spinach, salt and pepper.
4/ Allow omelet to cook 3 minutes before folding and flipping over with large spatula. Cook 3 additional minutes before plating. Top with goat cheese.
